The NZ Roasters Guild held cuppings across the country this week focusing on defects, and how they affect the flavour in the cup. Not a new thing for most roasters, but interesting, as rarely do we get the opportunity to focus on specific defects alone and how they affect the final cup.
Defects can potentially happen at any stage, farming, harvesting, processing and during roasting. It was a great experience to help develop sensory skills and further knowledge on QC protocols. It was good to get together and talk through our past experiences in cuppings in relation to defects.
After putting everyones tastebuds through a little defect torture, a few craft beers were had, along with some friendly coffee community banter.
This NZSCA Roasters guild event was held throughout NZ hosted by member companies. A huge thanks goes out Rene from Peoples leading the charge as chair of the Roasters Guild.
